Heirloom Tomato Salad with Burrata

Ingredients:

  1. 1.2kg heirloom tomatoes (tiger striped, plum, black Russian etc)

  2. 1 red onion

  3. 2 stalks of fresh basil

  4. 1 clove of garlic

  5. 1 pinch of sea salt

  6. 1 pinch of ground black pepper

  7. 1tbsp white wine vinegar

  8. 4tbsp extra virgin olive oil

  9. 120g Burrata

  10. 10 Kalamata olives

Directions:

  1. Slice all the tomatoes into bite sized wedges and mix together in a large bowl.

  2. Slice the red onion 3mm thick. Roughly chop the fresh basil leaves. Peel and finely slice the garlic. Pit and finely chop the olives.

  3. Add the sliced onions, garlic, basil and olives and toss together in the bowl.

  4. Season the tomatoes and onions with a pinch of salt, pepper, white wine vinegar and olive oil. Leave for 5 minutes to marinade and exchange flavours.

  5. Roughly tear the Burrata into snap pieces.

  6. To serve arrange the tomatoes onto plates, finish by scattering over the Burrata.

  7. Enjoy!
