Crab, Avocado, Mint Salad with Coconut & Lime Dressing.

Ingredients:

  1. 100g White Crabmeat

  2. 1 Avocado

  3. 100g Watercress

  4. 10g Fresh Mint Leaves

  5. 1 small red chilli

  6. 25ml Coconut Cream

  7. juice of half a Lime

  8. 50ml Groundnut Oil

  9. Ground Black Pepper to taste

Directions:

  1. To make the dressing, mix the coconut cream with the lime juice. slowly incorporate the oil, continually whisking as if you were making a mayonnaise. Season to taste and set a side.

  2. Deseed and finely dice the red chilli. Skin, halve and stone the avocado, then dice. Roughly chop the mint leaves.

  3. In a large salad toss together the watercress, mint, crabmeat, avocado and chilli. Dress the salad as you serve.

  4. Enjoy!
