Lentil Okra Curry

ingredients:

  1. 200g red lentils

  2. 1 medium onion

  3. 3 cloves garlic

  4. 1 tsp cumin

  5. 1 tsp turmeric

  6. 1/2 tsp coriander

  7. 1/2 tsp curry powder

  8. 1 poblano pepper

  9. 1 tbsp tomato paste

  10. 1 inch slice ginger

  11. 400g tinned tomatoes

  12. 500ml cups chicken stock

  13. 114g coconut milk

  14. 175g okra,

  15. salt and fresh black pepper to taste

  16. fresh coriander

directions:

  1. rinse the lentils under cool water.

  2. peel and finely dice the onion and garlic.

  3. deseed and dice the poblano pepper

  4. in a large pan heat 2 tbsp olive oil over medium heat.

  5. add the onion and garlic and saute until transparent.

  6. add the cumin, tumeric, coriander, curry powder, poblano pepper and cook until fragrant, about 30 seconds.

  7. grate the fresh ginger.

  8. stir in the tomato paste, ginger, tinned tomatoes and chicken stock. bring to a boil.

  9. add the lentils.

  10. lower the heat to a simmer and partially cover the pan, cook for about 20 minutes, stirring periodically.

  11. add the coconut milk and okra to the lentils, cook for about 10 minutes

  12. season to taste with salt and pepper.

  13. to serve garnish with a sprinkling of fresh coriander, drizzle olive oil and a side of warm naan.
