courgette and basil soup.

ingredients:

  1. 2 tbsp olive oil
  2. 1 onion
  3. 6 courgettes
  4. 3 cloves of garlic
  5. salt & pepper to taste
  6. 1 litre of water
  7. 50g fresh basil
  8. 1 tbsp fresh mint
  9. crème fraiche

directions:

  1. finely chop the onion.
  2. slice the courgettes
  3. heat the olive oil in a large pan over a medium heat
  4. drop the chopped onions into the pan and cook for a few minutes until translucent.
  5. using a garlic crusher,  add the cloves of garlic to the pan, along with the courgettes and season with salt and pepper. cook for a further 2 minutes.
  6. add the water and increase the heat to a simmer. simmer for 10-15minutes until vegetables have softened.
  7. remove from the heat and stir in the fresh basil and mint.
  8. pour into a blender 1/3 at a time and blitz.
  9. season to taste.
  10. serve with a dollop of crème fraiche
  11. enjoy!
