black rice, smoked salmon and dill salad.
dressing:
- tsp dijon mustard
- 1 lemon
- 1 ½ tbsp white wine vinegar
- 75ml olive oil
- 100g rapeseed oil
- black pepper to taste
- sea salt to taste
ingredients:
- 100g black rice
- 100g smoked salmon
- half cucumber
- 1 avocado
- 3 sprigs of dill
- 3 spring onions
- 25g of rocket
directions:
- in a medium sized pan bring 1 ½ cups of water to the boil, rinse the black rice, bring the boiling water down to a simmer, and add the black rice to the simmer water. leave to simmer for 60 minutes. check periodically and add extra water if needed.
- dice the cucumber, and avocado.
- finely chop the spring onions and dill
- slice the smoked salmon into stripes.
- juice one lemon
- blend together the lemon, dijon mustard, white wine vinegar, olive oil and rapeseed oil, salt and pepper for 30 seconds
- drain the rice and rinse under cold water and leave to cool.
- in a salad bowl toss together the black rice, cucumber, avocado, spring onions, dill, and half the dressing.
- serve adding the stripes of salmon on top and drizzle the reminder of the dressing.
