Teriyaki Salmon with Steamed Broccoli

Ingredients:

  1. 2 Salmon Fillets

  2. 1 tbsp Sweet Chilli Sauce

  3. 1 tbsp Honey

  4. 1 tsp Sesame Oil

  5. 1 tbsp Mirin

  6. 2 tbsp Soy Sauce 

  7. 2 tsp Fresh Root Ginger

  8. 2 tsp Toasted Sesame Seeds

  9. 120g Broccoli

Directions:

  1. Heat oven to 200/180* fan.

  2. Place the salmon fillets into a shallow baking dish.

  3. Finely grate the ginger.

  4. Mix together: sweet chilli sauce, honey, sesame oil, miring, soy sauce and ginger in a small bowl and pour over the salmon so the fillets are completely covered.

  5. Place in the oven and bake for 10 mins.

  6. Meanwhile trim and slice the broccoli stems

  7. Place 3/4 to 1 inch of water in a saucepan with a steamer and bring to a boil.

  8.  Add the broccoli to the steamer and cover; reduce heat to medium and allow to cook for 5-6 minutes. The broccoli is done when you can pierce it with a fork. As soon as it is pierce-able, remove from heat.

  9. Serve in shallow bowls adding broccoli then salmon and spoon over the juices. Top with a scattering of toasted sesame seeds.
