Superfood Brownie Energy Bars

Ingredients:

  1. 175g pitted Medjool dates

  2. 26g raw walnuts

  3. 26g raw pecans halves

  4. 52g shelled pistachios

  5. 26g desiccated coconut

  6. 1 tbsp chia seeds

  7. 3 tbsp unsweetened cocoa powder

  8. 1 tbsp melted coconut oil

  9. 1 tsp vanilla

  10. ¼ tsp sea salt

  11. 26g goji berries

Ingredients for topping:

  1. 45g 85% dark chocolate

  2. 1 tbsp shelled pistachios

  3. 1 tbsp goji berries

  4. 1 tbsp pecans

  5. a sprinkle of Maldon sea salt flakes

Directions:

  1. Line a loaf tin with greaseproof paper.

  2. Add the dates, walnuts, pecans, and only 26g of the pistachios to a blender. Blitz until chunky.

  3. Add the desiccated coconut, chia seeds, cocoa powder, melted coconut oil and vanilla extract. Blitz once again until mixture is chunky and slightly clumping.

  4. Add the remaining 26g of pistachios and goji berries. Pulse until the pistachios are slightly chunky.

  5. Add the mixture to the prepared loaf tin. Pressing evenly towards the sides of the pan.

  6. Add the dark chocolate to a heatproof bowl placed over a saucepan of simmer water until melted.

  7. Pour the melted chocolate evenly over the bars. Garnish with 1 tablespoon each of the following: pistachios, goji berries and crushed pecans.

  8. Place the tin in a freezer for 30 minutes-1 hour to harden.

  9. Once ready to serve, sprinkle with Maldon sea salt flakes and slice into bars

  10. Enjoy!
