Light and Fluffy Matcha Waffles

Ingredients:

  1. 280g Plain  Flour

  2. 1 tbsp Baking Powder

  3. 1 tbsp honey

  4. 1 tbsp Matcha Powder

  5. 2 Large Eggs Separated

  6. 60 ml  Rapeseed Oil

  7. 470 ml Milk

  8. 1 tsp Vanilla Extract

  9. 1 tbsp Melted Coconut oil

optional toppings:

  1. Strawberries, Raspberries, Blueberries, Blackberries

  2. Sunflower, Pumpkinseeds, Almond flakes

  3. Maple Syrup, Honey

  4. Crème fraîche, Greek Yogurt

Directions:

  1. Preheat your waffle iron.

  2. Melt the coconut oil. Brush the melted oil over the iron plates of the waffle iron and set aside.

  3. In a large bowl sifted and stir together the flour, baking powder, and matcha powder.

  4. In a separate medium bowl mix together the egg yolks, vegetable oil, milk, and vanilla extract.

  5. In a second medium bowl beat the egg whites with a hand mixer until stiff peaks form. Set aside.

  6. Add the egg yolk mixture to the dry ingredients and mix well.

  7. Fold in the egg whites.

  8. Pour the batter onto your hot waffle iron and cook according to your waffle iron manufacturer's directions

  9. Serve immediately with your choice of toppings. I favour crème fraîche, mixed berries and maple syrup.
