Green Gaspacho

ingredient:

  1. 2 celery sticks
  2. 1 green pepper
  3. 1 cucumber
  4. 1 green chilli
  5. 4 cloves of garlic
  6. 150g walnuts
  7. 150g baby spinach
  8. 25g basil leaves
  9. 10g parsel leaves
  10. 4 tbsp sherry vinegar
  11. 100ml olive oil
  12. 40g greek yoghurt
  13. 200ml water
  14. 50g ice cubes
  15. salt and pepper to taste

directions:

  1. roughly chop celery and place in the blender
  2. deseed and chop pepper, cucumber and chilli and add to the blender
  3. crush the garlic into the blender
  4. add walnuts, spinach, basil, parsley, vinegar, oil, yoghurt, water and ice cubes to the blender.
  5. blitz until smooth
  6. add salt and pepper to taste.
  7. serve with a ice cube and a drizzle of olive oil
  8. enjoy!
