GASPACHO
ingredients:
- 1 kg very ripe tomatoes
- 1 cucumber
- 3 cloves of garlic
- 50 ml extra virgin olive oil
- 2 tbsp sherry vinegar
- salt to taste
directions:
- dice the tomatoes.
- deseed and dice the cucumber.
- mix the diced tomatoes and cucumber with the crushed garlic and olive oil in a large bowl and place in the fridge for 2 hours.
- after the two hours has passed, blitz in the blender until smooth
- add the salt and vinegar to taste and stir well.
- pass the mixture through a fine sieve, then cover and refrigerate for a further 2 hours.
- serve with garnishes of your choice: a) diced black olives, hard-boiled egg and small pieces of cucumber and pepper b) mint or parsley c) spring onion and cubes of Spanish ham.
