spiced red lentil and carrot soup
this is a wonderfully fast, easy to make, healthy, tasty, vegan friendly soup that keeps hunger at bay... its a wonderful warm when it snow out there!
ingredients:
- 1 litre of vegetable stock
- 190g dried red lentils
- 1 onion
- 3 carrots
- 1 celery stick
- 1 tsp dried coriander
- pinch of cayenne chilli pepper
- pinch of ground ginger
- a handful fresh coriander
directions:
- dice the onion, carrots & celery
- place the stock, onions, carrots, celery, and lentils into a large saucepan and bring to the boil.
- turn heat down, add the dried coriander, cayenne chilli pepper, ground ginger and simmer for 25/30 minutes.
- place 1/3 of the simmered mixture into a blender and puree.
- repeat placing half of the remaining simmered mixture into the blender and puree.
- final add the last of the simmered mixed into the blender and puree.
- add salt and pepper to taste.
- serve with fresh coriander.
