lamb koftas with kohlrabi, beetroot and apple salad

lamb koftas ingredients:

  1. 500g minced lean lamb
  2. 2 shallots
  3. 1 fresh red chilli
  4. 10g fresh root ginger
  5. 10g mint leaves
  6. 10g coriander leaves
  7. ½ tbsp ground cumin
  8. ½ tbsp ground coriander
  9. 2 cloves of garlic
  10. 4 tsp coconut oil
  11. squeeze of lemon juice

directions:

  1.  finely chop the shallots and red chilli.
  2. peel and grate the ginger and garlic cloves. 
  3. finely chop the mint leaves and coriander leaves
  4. juice 1 lemon
  5. melt the coconut
  6. mix together the minced lamb, onion, chilli, ginger, herbs, ground spices, garlic and a large pinch of salt in a bowl. divide the mixture into eight portions and roll each one into a long sausage shape.  
  7. set a side whilst you prep the salad

  • salad ingredients:
  1. 1 medium kohlrabi
  2. 1 medium beetroot
  3. 1 red apple
  4. 25g flat leaf parsley
  5.  1 lime

directions:

  1. juice 1 lime
  2. grate the apple with skin on and place immediately in the lime juice. 
  3. peel and grate the kohlrabi and beetroot
  4. roughly chop flat leaf parsley
  5. combine lime coated apple kohlrabi, beetroot and parsley into a large bowl
  6. set a side

cucumber and yoghurt dip ingredients:

  1.  1/2 cucumber
  2. 200g natural yoghurt
  3. 10g mint leafs

directions:

  1. remove the centre from the cucumber and finely dice
  2. finely chop the mint leafs
  3. mix all 3 ingredients and place in a serving dish

cooking of the koftas directions:

  1. heat a griddle pan over a medium heat. lightly brush the koftas with some melted coconut oil and cook them for three to four minutes on each side.
  2. remove from the pan and set aside to rest for 10 minutes. 
  3. serve the koftas with a squeeze of lemon, a side of the kohlrabi, beetroot and apple salad and the yoghurt  dip.
  4. enjoy!
