Papa's Moroccan Chicken

my dads moroccan chicken is a brilliant nurturing winter warmer to refuel the body.
ingredients
- 1 onion
- 2 chicken breasts
- 2 Tbsp olive oil
- 1 tsp turmeric
- 2 tsp ginger
- 2 tsp cumin
- ½ tsp paprika
- ¼ tsp cinnamon
- 1 tsp ras el hanout
- 630 ml chicken stock
- 2 Tbsp coriander with stems
- salt to taste
- 100g dried apricots
- 2 small/ medium preserved lemons quartered
- 1 Tbsp honey
- 100g couscous
directions
- soften onions with olive oil
- chop the two chicken breasts into cubes
- add chicken and brown
- add turmeric, ginger, cumin, paprika, cinnamon & ras el hanout.
- add chicken stock,
- roughly chop coriander including stems and add
- simmer for 30 minutes.
- add salt, dried apricots, preserved lemons & honey.
- turn the temperature to a higher simmer & stir; allow to reduce for an extra 5-10min
- place couscous in a bowl & pour over 160ml of boiling water. cover the bowl & leave for 5-8 minutes. stir in a dash of olive oil.
- it's time to serve. no need to be greedy, remember portion control.
